Description:
This cut is located between the front legs. Only 2 available per animal. This is a very tough cut. Likes slow cooking methods that help tenderizing. When cutting need to make sure you cut against the grains to help with tenderizing.
The 1/2 briskets are cut at the point where the brisket grains change direction.
