This is one of those miss leading cuts meaning that the cut is named as the sirloin tip but this one is not from the sirloin. This cut is really from the Round or Rump. This roast comes off the the Round tip portion. Best cooked to medium-rear. Does not like being over cooked. Low and slow cooking methods.
