Description:
Complete Tenderloin, thick on one end and tapers off. This cut is also known for being the small side of the T-bone and Porter house steaks. This cut when cut into steaks is known as the Tenderloin Steak or Filet Mignon. This is the most tender of cuts. This cut is best cooked to medium-rear.
Most common uses:
Centerpiece for special occasions or holidays (Christmas & Thanksgiving)
